COD AND ASPARAGUS BAKE ENJOY DAN:


                       COD AND ASPARAGUS BAKE by CHEF DAN:
Serves 4

INGREDIENTS:
4 cod fillets (4 Oz) each
1-pound asparagus, ends trimmed
4 cloves garlic, minced
Sea salt and freshly ground black pepper to taste
1 teaspoon EACH lemon pepper, oregano, and tarragon
1 thinly sliced lemon
2 tablespoons caper, drained
4 tablespoons butter

DIRECTIONS: (PREHEAT OVEN TO 400 F)
1.   Prepare 4 separate foil pieces (large enough to completely cover each fillet of fish, when folded.
2.   Place equal portions of asparagus in the center of each foil.
3.   Season with salt and pepper.
4.   Place each fish fillet on top of asparagus.
5.   Season each with a pinch of salt and pepper and next 3 ingredients.
6.   Sprinkle with minced garlic.
7.   Top each fish fillet with a thin lemon slice
8.   Sprinkle 1 tablespoon drained capers over each fillet.
9.   Top each fillet with 1 tablespoon thinly sliced butter.
10  Wrap the foil ends over the top of the fish to completely enclose.
11  Do not wrap to tightly or to close to the fish-leave some space.
12  Place foil wrapped fish fillets on a prepared baking sheet.
13  Bake for 15-20 minutes or until fish baked through and flaky.
