STUFFING THAT'S WHAT WE NEED FOR THANKSGIVING ENJOY DAN

      STUFFING WITH RED TART CHERRIES, BACON AND WALNUTS by CHEF DAN:
Serves 8-10

INGREDIENTS:                       (FOR 12-14 POUND TURKEY)

1 tablespoon butter
10 pieces Canadian bacon, cut into thin strips
2 shallots, finely chopped
1 cup red tart cherries
A couple springs of fresh rosemary chopped
2 stalks celery, finely chopped
1/2-teaspoon EACH nutmeg and allspice
2 cups cider
1 cup toasted walnuts
1 pound pork sausage
1 egg
2 cups Panko Japanese bread crumbs
Sea salt and freshly ground black pepper to taste

DIRECTIONS:

1.    Melt the butter in a saucepan, over medium-heat.
2.    Add the bacon, shallots, celery and rosemary, cook gently for 10 minutes.
3.    Add red tart cherries, cider, increase a little and cook until reduced by1/3
4.    Set aside and mix in nutmeg, allspice, walnuts, sausage meat, egg, and a little salt and pepper, then fold in the Panko bread crumbs.
5.    Mix thoroughly.
6.    Add to the cavity of the turkey.
