CROCK POT CHICKEN CACCIATORE by CHEF DAN:
Serves 10-12
INGREDIENTS:
12 skinless, boneless, chicken breast halves
2 onions, finely sliced
4 garlic cloves, finely sliced
2 (8oz) cans stewed tomatoes with chilies
2 cups burgundy
3 tablespoons, drained capers
1 teaspoon EACH dried oregano, basil, rosemary, and cilantro
1 pound fresh mushrooms, sliced
DIRECTIONS:
1. Coat bottom of a skillet with olive oil and heat to medium-heat.
2. Add chicken and brown on all sides.
3. In the crock pot place sliced onion and garlic on the bottom.
4. Add all the ingredients and top width stewed tomatoes.
5. Cook on low for 7-9 hours.
