CROCK POT CHICKEN WITH 20 CLOVES OF GARLIC FOR THE BILLICK TREE FARM

Serves 10-12
INGREDIENTS:
1 (5-6 pound) whole chicken
40 garlic cloves
1 cup white wine
2 teaspoons all spice
2 spring’s rosemary
DIRECTIONS:
1. Remove neck, liver and gizzard; wash in cold water, cut off any extra fat, pat dry with paper towels.
2. Place rosemary spring and allspice in the cavity of the chicken.
3. Rub the skin with a little olive oil and sprinkle with some allspice and rosemary.
4. Place chicken in the crock pot.
5. Add 40 cloves of garlic (unpeeled) around the chicken.
6. Cover with wine.
7. Cook on low 8-10 hours on high 4-5 hours.
