STACKED WATERMELON GOAT CHEESE SALAD ENJOY DAN:

    STACKED WATERMELON GOAT CHEESE SALAD by CHEF DAN:
4-4-inch tartlet rings

INGREDIENTS:
Four 4-inch tartlet rings watermelon rounds
1/2-cup goat cheese
1/2-cup roasted pistachios, chipped
1/4-cup Balsamic Vinegar reduction

DIRECTIONS:
1.   Using the tartlet rings; punch out 4 circles.
2.   Spread the watermelon with a thin 1/4-inch layer of goat cheese.
3.   Top the cheese with a layer of chopped pistachios.
4.   Turn the balsamic vinegar into a reduction by cooking in a skillet over-high heat until it thickens and turns syrupy.
5.   Thicken very fast so keep your eye on it.
