QUINOA SALAD ENJOY DAN:

                                   QUINOA SALAD by CHEF DAN:
Serves 4

INGREDIENTS:
1 cup quinoa
2 cups water
2 tablespoons olive oil
1 tablespoon lime juice
1-teaspoon EACH cumin, smoked paprika, and marjoram leaves
1/2-teaspoon sea salt
1/4-teaspoon black pepper
1/2-cup cherry tomatoes, halved
1 avocado, pitted, skinned and sliced
1 (15 Oz) can black beans, drained and rinsed
2 tablespoons fresh snipped chives

DIRECTIONS:
1.   Bring quinoa and water to a boil in a pot.
2.   Reduce heat cover, simmer for about 15 minutes.
3.   Fluff; set aside to cool.
4.   Whisk together oil and next 5 ingredients in a bowl.
5.   Combine cooked quinoa, tomatoes, avocado and black beans in a bowl.
6.   Pour dressing over quinoa mixture; toss to coat.
7.    Top with fresh snipped chives
