THIS THE SEASON FOR MORELS ENJOY DAN:


                               MORELS MY WAY by CHEF DAN:
Serves 2

INGREDIENTS:
4 ounces fresh morels about 8-10
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 tablespoon corn meal

DIRECTIONS:
1.   Slice in half lengthwise.
2.   Rinse in cold water several times to get the grit out.
3.   Dry on a towel and place in a bowl.
4.   Sprinkle with flour and corn meal.
5.   Cover and shake real hard until mix together.
6.   In a frying pan add butter and oil over medium-heat.
7.   Sauté the morels until they release the liquid about 5 minutes.
8.   Reduce heat and simmer until liquid has evaporated about 5-7 minutes


MY WAY: WITH SCRAMBLED EGGS OR EGG BEATERS:
2 tablespoons butter
8-10 morels, sliced length wise
2 eggs
A splash of milk or cream

DIRECTIONS:
1.   In a fry pan over medium-heat add the butter and when sizzling.
2.   Add morels and sauté for 5 minutes or until they release the liquid.
3.   In a bowl add eggs and a little milk or cream.
4.   Whisk together.
5.   Add to the morels, and cook until eggs are set.
