ARUGULA AND ORZO WITH CANADIAN BACON ENJOY DAN:


       ORZO WITH ARUGULA AND CANADIAN BACON by CHEF DAN:
Serves 4

INGREDIENTS:
1/2- pound orzo
2 tablespoons olive oil
2 shallots
3 tablespoons fresh chives
2 teaspoons lemon zest, plus more for serving
1 bunch arugula, thick stems trimmed, leaves torn
3 ounces Canadian bacon, chopped
1/3-cup Parmesan cheese
Salt and pepper to taste

DIRECTIONS:
1.   Cook orzo in a pot of salted boiling water, until al Dente.
2.   Drain, reserving 2 cups.
3.   Meanwhile, heat oil in a skillet over medium-heat.
4.   Add shallots, Canadian bacon, and sauté for 4-5 minutes.
5.   Add orzo, chives, 2 teaspoons lemon zest, and 3/4-cup cooking liquid.
6.   Cook tossing and adding more liquid 1/4-cupful as needed, about 4 minutes.
7.   Add arugula and 1/3-cup Parmesan cheese, season with salt and pepper.
8.   Top orzo with more lemon zest and Parmesan cheese.
