SAUSAGE FOR BREAKFAST WITH PINE NUTS AND ORANGE ZEST ENJOY DAN:


         BREAKFAST SAUSAGE PATTIES WITH PINE NUTS by CHEF DAN:
Makes 8 patties

INGREDIENTS:
1 pound ground pork
2 teaspoons fennel seeds
2 cloves garlic, minced
1/2-teaspoon Italian seasoning
1/2-teaspoon orange zest
1/8-teaspoon cayenne pepper
1 teaspoon lemon pepper
1/2-cup toasted pine nuts.

DIRECTIONS:
1.   With a knife sharp edge slightly chop fennel seed, into just course.
2.   In a cast iron skillet over low-heat toast the pine nuts until slightly browned.
3.   Place pork in a bowl, and sprinkle fennel, garlic, black pepper, lemon zest, Italian seasoning, cayenne pepper, and pine nuts.
4.   Fold all together with a fork, nice and easy.
5.   Cover and refrigerate overnight.
6.   Next day place plastic wrap on a cutting board and roll sausage into a ball.
7.   Place sausage ball between 2 sheets of plastic wrap.
8.   Press until 3/8-inch thick.
9.   Place in frying pan over medium-high heat.
10.                Cook 3-4 minutes, flip and cook 3-4 minutes more or until nice and brown.
