WHAT AN APPETIZER GOOD FOR ANY PARTY ENJOY DAN:

              MUSHROOM GOAT CHEESE PHYLLO BITES by CHEF DAN:



Makes 45 bites



INGREDIENTS:



1 pound baby portabella mushrooms

1/2-pound white button mushrooms

3 tablespoons butter

3 garlic cloves, minced

12 ounces goat cheese

2 teaspoons fresh thyme, finely chopped

2 teaspoons fresh parsley, finely chopped

1/2-teaspoons fresh ground black pepper

1/8-teaspoon kosher salt

45 mini phyllo shells



DIRECTIONS:                                     (PRE-HEAT OVEN TO 350 DEGREES)





1.    Melt butter in a skillet over medium-heat.

2.    When butter is sizzling add garlic and cook for 1 minute.

3.    Add mushrooms, seasoned with salt and pepper, stir and sauté until the mushrooms have cooked down and wilted about 7-9 minutes.

4.    Remove from heat.

5.    Stir in goat cheese, thyme and parsley.

6.    Let cool slightly.



ASSEMBLING THE BITS:



1.    Place 1 heaping teaspoon of mushroom mixture into each cup.

2.    Place cup on a baking sheet and bake at 350 degrees for 3-4 minutes or until the mushroom filling is warm and the phillo cup is crisp.

3.    Garnish with fresh parsley and serve immediately.
