ASPARAGUS, CURRY, PLUM SAUCE AND CASHEWS ENJOY DAN:

 THAI ASPARAGUS WITH CASHEWS AND PLUM SAUCE by CHEF DAN:

Serves 4



INGREDIENTS:



1 tablespoons butter

1 pound asparagus, cup diagonally in 1-inch pieces

1 tablespoon olive oil

2 tablespoons plum sauce

1 teaspoon fish sauce

1 tablespoon red curry paste

1 tablespoon lime juice

1/2-cup cashews



DIRECTIONS:



1.    Melt butter and oil in a skillet over medium-heat.

2.    Add red curry paste and stir until melted and fragrant.

3.    Add asparagus, plum sauce, cashews, and fish sauce.

4.    Stirring and cooking asparagus until tender crisp, about 4-5 minutes.

5.    Remove from heat and toss in the lime juice.
