PORK AND PEANUT SAUCE ENJOY DAN:

                    PORK SKEWERS WITH PEANUT SAUCE by CHEF DAN:

Serves 4-6



INGREDIENTS:



2 garlic cloves

1 thumb size fresh ginger

1 tablespoon red curry paste

1 tablespoon lime juice

1 tablespoon fish sauce

1/2-cup chunky peanut sauce

1 cup coconut milk

2 tablespoons soy sauce.

1 pound boneless pork tenderloin



DIRECTIONS:       (TURN OVEN TO BROIL)



1.    In a blender, combine all ingredients except pork, and blend until you have a smooth paste.

2.    Adjust seasoning as needed, should be spicy, salty, and hot.

3.    Set 1/2-cup of the marinate aside, and use for dipping sauce.

4.    Slice pork tenderloin crosswise into 16 slices.

5.    Place each pork slice between 2 sheets of plastic wrap.

6.    Pound with a mallet until 1/4-inch thick.

7.    Toss the pork in the marinade, and toss until well coated.

8.    Marinade up to 4 hours or overnight.

9.    Thread meat onto skewers, without crowding.

10. Place on wire rack over a baking sheet.

11. Heat a broiler, and cook pork until browned all over, turning once, about 5-8 minutes.

12. Serve with reserved dipping sauce and garnish with lime wedges.
