SHRIMP OH NO AND CHICKEN TOO ENJOY DAN:

                            SHRIMP AND CHICKEN JAMABALAYA by CHEF DAN:

Serves 4



INGREDIENTS:



2 tablespoons butter

1/2-pound shrimp, peeled and deveined

1 cup chicken breast meat, cubed

1/2-pound kielbasa sausage or polish sausage, cut into 1/2-slices

2 onions, chopped

4 garlic cloves, minced

3 cups chicken broth

1 green bell pepper, diced

1 (14.5oz) can diced tomatoes

1/2-teaspoon dried thyme

1/8-teaspoons cayenne pepper

1 teaspoon Worcestershire sauce

1/2-cup scallions, thinly sliced on the bias



DIRECTIONS:



1.    In a skillet,  over medium-heat sauté onion and garlic in butter until crisp and tender about 5 minutes

2.    Add sausage, tomatoes, green pepper, thyme, Worcestershire sauce, and cayenne, season with salt and pepper, cook 3 minutes more.

3.    Sauté  stirring occasionally.

4.    Pour in the broth and bring to a boil.

5.    Add rice, cover and simmer over medium low heat for about 15 minutes, or until the rice has absorbed all the broth.

6.    Add cooked chicken and shrimp.

7.    Cook about 3-5 minutes or until shrimp have turned pink and rice is tender.

8.    Garnish with scallions
