SOUP KITCHEN IS EATING GOOD ENJOY DAN:

                FAUX PHO for THE SOUP KITCHEN by CHEF DAN:

Serves 30-40



INGREDIENTS:



9 packages instant ramen

8 ounces snap peas, sliced on the bias

2 tablespoons olive oil

4 onions, chopped

3 tablespoons, Serrano or jalapeño, thinly sliced

8 garlic cloves, crushed

2 thumb-size fresh ginger pieces, smashed

22 cups beef stock

4 star anise

15-4-inch cinnamon sticks

4 cups, mushrooms, oyster, thinly sliced

3 pounds sirloin, sliced crosswise 1/8-inch thick

3 tablespoons EACH dried cilantro, basil, and mint

1/3-cup fish sauce

1/3-cup lime juice



DIRECTIONS:



1.    In a stock pot over medium-heat melt oil.

2.    When sizzling add onion, ginger, and garlic.

3.    Cook starring occasionally, or until garlic is golden, about3-4 minutes.

4.    Add broth and bring to a boil, adding star anise, cinnamon.

5.    Simmer until flavors melt about 8-10 minutes.

6.    Add mushrooms, snap peas and herbs, simmer for 2 minutes.

7.    Throw in top ramen, fish sauce, and lime juice and simmer for 12 minutes.

8.    Add beef slices to soup: simmer until meat is just cooked through, about 4 minutes.

9.    Discard cinnoman and star anise.
