USE PORK BUTT, FLANK STEAK, OR ROAST BUT DELICIOUS ENJOY DAN:

                CROCK POT BBQ. SMOKED PORK BUTT SANDWICHES by CHEF DAN:
Serves 10-12                                      (FOR THE TREE FARM CREW)

INGREDIENTS:

5-7-pound smoked pork butt
6 tablespoons brown sugar
3/4-teaspoon black pepper
1 onion, chopped
1 cup tomato paste
1/4-cup Worcestershire sauce
1/4-cup molasses
1/4- cup cider vinegar
1 (8oz) bottle root beer
1 (18oz) jar bbq. sauce
2 tablespoons chili powder
1 tablespoon garlic powder
2 tablespoons yellow mustard
2 teaspoons cumin
12-14- soft sandwich buns
Garnish with red onion slices and dill pickle slices

DIRECTIONS:

1.    Combine 2 tablespoons brown sugar and black pepper.
2.    Rub all over the meat.
3.    Combine 1/4-cup brown sugar, onion, and next 11 ingredients in the crock-pot.
4.    Add meat, turn to coat.
5.    Cover.
6.    Cook on high-heat for 1 hour.
7.    Reduce heat setting on low and cook for 6-8 hours.
8.    Remove meat; reserve sauce.
9.    Shred meat with 2 forks.
10. Return shredded meat to the cooker.
11. Stir into sauce.
12. Spoon sauce onto bottom half of the French bread slices.
13. Top with onion and pickles.
