SLOW COOKING THE ONLY WAY TO GO ENJOY DAN:

           THAI PORK IN THE CROCK POT WITH NOODLES by CHEF DAN:
Serves 4

INGREDIENTS:

1-2-pound boneless pork loin
1 box chicken stock
1/2-cup soy sauce
1/2-cup white wine or dry sherry
1/3-cup creamy peanut butter
1 teaspoon red pepper flacks
1/4-cup DAN’S honey
6 garlic cloves, minced
1 thumb fresh ginger root
2 pieces star anise
4-ounces dried rice vermicelli noodles
1/2-cup fresh cilantro

DIRECTIONS:

1.    Combine the chicken broth, soy sauce, rice wine, peanut butter, pepper flacks, honey, garlic, ginger, star anise and a little salt.
2.    Place in crock pot.
3.    Add the pork, cover and cook on low for 6- 8 hours.
4.    With 15 minutes to go add the vermicelli noodles, making sure they are submerged.
5.    Remove the pork from the crock pot and shred the meat.
6.    Return the shredded pork to the sauce.
7.    Let cook until hot and serve.
8.    Sprinkle with fresh cilantro.
