THE SOUP KITCHEN GOT IN SOME SAUSAGE AND SOOOO SAUSAGE SOUP ENJOY DAN

                    SAUSAGE WITH PASTA AND BEANS by CHEF DAN:
Serves 20

INGREDIENTS:

3 pounds sausage
8 cups pasta, your choice
4 cups dried beans, your choice
4 onions, chopped
10 garlic cloves, minced
1 gallon can diced tomatoes
3 tablespoons thyme
1 tablespoon sage
2 cups salsa
15 cups beef broth

DIRECTIONS:
1.    Soak beans over-night.
2.    Pour of the water and add enough water to cover beans.
3.    Bring to a boil and then simmer for 1-1/2-2 hours.
4.    In a soup stock pot cook sausage, onion and garlic over medium-heat.
5.    Sauté for about 8 minutes.
6.    Stir in tomatoes, beans, broth, thyme, sage, and salsa.
7.    Bring to a boil, then reduce heat and simmer for 30 minutes.
8.    Add pasta, and simmer for 15-20 minutes, stirring occasionally.
