QUICK AND EASY AND OH SO HEALTHY ENJOY DAN

CHICKEN OR TUNA AND TOMATO GREEK SALAD by C HEF DAN:


serves 4



INGREDIENTS:



1 can (10oz) chunk white chicken or tuna, well drained

2 beef steak tomatoes, chopped

1 cucumber, diced

1 zucchini, diced

1 small onion, chopped

3 cloves garlic, minced

12 black olives, cut in half

1/4- cup feta cheese

romaine lettuce leaves



DRESSING:

1.2 tablespoons olive oil

2.1/4- cup white wine vinegar

3.2 teaspoons shredded lemon peel

4.1 tablespoon lemon juice

5.1 teaspoon sugar

6.1 teaspoon dried basil



DIRECTIONS:

1. In a jar with screw-top lid, cover and shake all ingredients of the dressing well to mix.

2 Combine chicken, tuna, tomatoes, cucumber, zucchini, onion, garlic, basil, olives and cheese in a large bowl.

3 Add dressing and toss well.

4 Serve on lettuce leaves.
