THAI GREEN CHICKEN SOUP WITH BOK CHOY ENJOY DAN:

          THAI GREEN CHICKEN SOUP WITH BOK CHOY by CHEFDAN:
Serves 4

INGREDIENTS:
2 tablespoons sesame oil
2 boneless, skinless chicken breasts, pouched, and shredded
4 cups broth
6 cremini mushrooms thinly sliced
1 red bell pepper, chopped
2 garlic cloves, minced
1 thumb-size fresh ginger, minced
1 tablespoon EACH green curry paste, soy sauce and fish sauce
3 baby bok choy, sliced
2 teaspoon sherry vinegar
Kosher salt and freshly ground black pepper to taste

DIRECTIONS:
1.   Add sesame oil to a Dutch over medium-high heat and when sizzling.
2.   Add mushrooms, and next 3 ingredients, sauté for 4 minutes.
3.   Add green curry paste, soy sauce and fish sauce sauté for 1 minute.
4.   Add broth and bring to a simmer.
5.   Add shredded chicken and bok choy and cook 1 minutes.
6.   Remove from heat and add sherry vinegar.
7.   Season with salt and pepper.
