GREEN BEANS AND CUCUMBER WITH MISO DRESSING ENJOY DAN:

          GREEN BEANS AND CUCUMBERS WITH MISO DRESSING!!
Serves 4

INGREDIENTS:
1 English cucumber-sliced
kosher salt
1-pound green beans, trimmed
1 thumb-size fresh ginger, peeled and finely grated
1poblano pepper, blackened and sliced

DRESSING:
4 tablespoons miso dressing
1/3-cup chicken stock
1 garlic clove, minced
3 tablespoon rice vinegar
2 tablespoons olive oil
Garnish with toasted sesame seeds and sliced scallions

DIRECTIONS:
1.   Ste am or boil beans until tender crisp, about 3-5 minutes.
2.   In a bowl add cucumber and cooked beans.
3.   In skillet whisk together dressing ingredients and bring to a boil.
4.   Cook 1 minute.
5.   Serve warm or at room temperature.
6.   Garnish with toasted sesame seeds and sliced scallions.
