CHILI
LIME PORK ROAST ON THE TRAEGER GRILL by CHEF DAN:
Serves
4
INGREDIENTS:
2-pound
pork roast
1
tablespoon EACH chili powder, and smoked paprika
2
tablespoon lime juice
3
tablespoon olive oil
2
garlic cloves, minced
1
tablespoon soy sauce
DIRECTIONS:
1.
In
a bowl whisk together 2 tablespoon olive oil and the rest of the ingredients.
2.
In
zip lock bag place the pork and pour in the marinate.
3.
Let
rest 4 hours or more in the refrigerator.
4.
Remove
from refrigerator and take out of the marinate.
5.
Reserve
the marinate.
6.
On
the Traeger grill on Smoke with the lid open for 5 minutes.
7.
Set
the temperature to 325 F and preheat with closed lid for 15 minutes.
8.
Place
pork on the grill and baste with marinate, grill for 50 minutes or internal
temperature reaches 160 F.
9.
Let
stand on a cutting board for 5 minutes.
10
Slice
into 3/4-inch slices and serve.
