Serves

INGREDIENTS:
1-Pound
ahi tuna stakes
1/2-onion,
thinly sliced
1-scallion,
bias sliced to 1/2-inch lengths
2
garlic cloves, minced
2
teaspoons black toasted sesame seeds
2
teaspoon toasted pine nuts
2
tablespoons ponzu (recipe to follow)
2
tablespoons sesame oil
1
teaspoon chili garlic sauce
1/4-teaspoon
sea salt
DIRECTIONS:
1.
Slice
the tuna into 1-inch cubes.
2.
Place
in a bowl.
3.
Combine
all remaining ingredients.
4.
Gently
mix and thoroughly combine.
5.
Cover
and refrigerate for 2 hours or up to 2 days.
PONZU
SAUCE:
1/2-cup
fresh lime juice, or a 1/2-lemon juice or combination of both
2
tablespoons EACH rice vinegar, mirin, and pure maple syrup
1/3-cup
soy sauce
1-teaspoon
fish sauce
DIRECTIONS:
1.
Whisk
together all ingredients and let stand 1 hour.
2.
Store
covered and refrigerate for 3 days.
