CHICKEN TENDERS WITH CORNMEAL ENJOY DAN:

                 CHICKEN TENDERS WITH CORNMEAL by CHEF DAN:
Serves 4

INGREDIENTS:
1 egg, beaten
1-pound chicken tenders,
1 cup cornmeal
1/2-cup Parmesan cheese
1/2-teaspoon EACH paprika, garlic powder, flax seeds, fennel seeds and salt
1/4-teaspoon freshly ground black pepper

DIRECTIONS (PREHEAT OVEN TO 400 F)
1.   In a dry cast-iron skillet over low-heat cook seeds until they start to pop.
2.   Crack egg in a bowl.
3.   Add all dry ingredients and spices in a bowl.
4.   Dip the chicken in egg and then dredge through mixture.
5.   Use your hands to add more mixture on top so they are coasted.
6.   Bake in pre-heated oven for 20-22 minutes.
