WATERMELON
CANTALOUPE SALAD WITH GRAPES by CHEF DAN
Serves

INGREDIENTS:
6
cups watermelon, cubed
6
cups cantaloupe, cubed
3
cups red seedless table grapes
3
cups blueberries
4
tablespoon mint leaves, finely chopped
1/2-cup
lemon juice
1
teaspoon sea salt
1/2-teaspoon
freshly ground black pepper
2
tablespoon olive oil
2
tablespoons walnuts, finely chopped
2
tablespoon honey or pure maple syrup
1/4-cup
feta cheese
DIRECTIONS:
1.
In
a salad bowl, watermelon and next 4 ingredients.
2.
In
another bowl add lemon juice and next 6 ingredients.
3.
Whisk
until combined.
4.
Add
to the fruit bowl, and toss gently.
5.
Top
with feta cheese.
