MEATLOAF IN THE CROCK POT ENJOY DAN:

                      MEATLOAF IN THE CROCK POT by CHEF DAN:
Serves 12

INGREDIENTS:
1-1/2-pounds white ground turkey or lean ground beef
1-1/2-cup enchilada sauce
4 eggs
1-1/2-cups Panko
1-(15 Oz) can black beans, drained and rinsed
1 tablespoon dried minced onions
2 teaspoons EACH, sea salt, ground sage, cumin, and paprika
8 crimini mushrooms, sliced
1 (Oz) can green chilies, drained well
1/2-cup ketchup
1/4-cup brown sugar
2 teaspoon ground mustard
1 teaspoon Worcestershire sauce
1-1/2-cups Mexican cheese blend


DIRECTIONS:
1.   Combine turkey 1/2-cup enchilada sauce, and next 10 ingredients together in a bowl.
2.   Mix everything together with your clean hands and mix well.
3.   Shape into a round loaf and place in a 6-quart crock pot.
4.   Cover the top of the meat with the remaining enchilada sauce.
5.   Cover and cook for 8 hours.
6.   Whisk ketchup and next 3 ingredients in a bowl.
7.   Spoon sauce over the meat loaf.
8.   Top with cheese.
9.   Cover and cook on high for about 12-15 minutes or the cheese is melted.
