CHICKEN TENDERS WITH WALLA WALLA SWEET ONIONS

INGREDIENTS:
1.5
pounds chicken tenders
1/4-cup
almond meal
1-Walla
Walla sweet onion, sliced
3
garlic cloves, sliced
1
tablespoon olive oil
Kosher
salt and freshly ground black pepper to taste
2
tablespoon fresh snipped chives
DIRECTIONS:
(PREHEAT OVEN TO 400 F)
1.
Place
chicken and almond meal in a zip-lock bag and toss to coat.
2.
Shake
off excess almond meal.
3.
On
a prepared baking sheet, chicken, onions, garlic, salt & pepper.
4.
Drizzle
with olive oil.
5.
Bake for 40-45 minutes.
6.
Sprinkle
with chives.
7.
Serve
with fresh fruit.
