WHISKEY GLAZED CARROTS WITH TARRAGON ENJOY DAN:

      WHISKEY GLAZED CARROTS WITH TARRAGON by CHEF DAN:
Serves 8

INGREDIENTS:
1/2-cup butter, divided
2 bunches of carrots, cut into thick rounds
1/2-cup whiskey
1/2-cup maple syrup
1 garlic clove, minced
2 tablespoon fresh tarragon, chopped
1 teaspoon Dijon mustard
Seas salt and freshly ground pepper to taste

DIRECTIONS:
1.   Melt 1 tablespoon butter in a skillet over medium-high heat when sizzling.
2.   Add carrots and sauté for 1-1/2-minutes.
3.   Remove from skillet.
4.   Add reaming butter in a sauce pan over medium-heat and when sizzling.
5.   Add the mustard, maple syrup, garlic,  and S. &.P.
6.   Bring to a simmer and simmer 5 minutes.
7.   Remove the pan from the heat and slowly stir in the whiskey.
8.   Return carrots to the pan and simmer for 10 minutes, until thick and syrupy and the carrots are glazed.
9.   Set aside and keep warm.
10.                Top with fresh tarragon.
