SAUTEED
BEET GREENS WITH HOT & SPICY CHERRY TOMATOES

Serves 4
INGREDIENTS:
2
tablespoons coconut oil
1/2-Walla
Walla Sweet onion, chopped
3
garlic cloves, minced
1
thumb-size fresh ginger, grated
1
pound beet greens-stems discarded and shredded
1-1/2-teaspoons
capers
1/2-teaspoon
tomato paste
2
each hot & spicy Cherry Pepper (TRADER JOE’S)
Sea
salt and Seasoned Pepper Medley to taste
DIRECTIONS:
1.
Heat
oil in a skillet over medium-heat.
2.
Cook
and stir onion in hot oil until it begins to turn translucent.
3.
Sauté
for 4-5 minutes.
4.
Fold
the beet greens into the onion mixture, cook until greens wilt about 4-5 minutes.
5.
Add
capers, cherry tomatoes, and cherry peppers.
6.
Cook
and stir until hot, about 1-2 minutes.
7.
Remove
from skillet and season with salt & pepper.
