YAKIMA WASHINGTON BEEF STEAK TOMATOES AND ORANGE SALSA ENJOY DAN:

YAKIMA BEEFSTEAK TOMATOES ORANGE SALSA AND GINGER by CHEF DAN:
Serves 4   (SERVE OVER GRILLED FISH) (my recipe from 1984)

INGREDIENTS:
3 or 4 jalapenos, diced, seeded
3 or 4 tomatoes, diced
1 red onion, finely chopped
3 tablespoons fresh cilantro
1-1/2-teaspoons cumin
1 tablespoon whole coriander seed
2 tablespoons chili powder
Zest of one orange
The flesh of 2 oranges, peeled, and sectioned, chopped
1/2-cup lime juice
1 thumb-size fresh ginger, ground
Salt
1 tablespoon oil

DIRECTIONS:
1.   Mix in a bowl and refrigerate for 3-4 hours.
2.   Serve over your favorite fish recipe.
