RUSSIAN BEEF STEW FOR THE PEOPLE VISITED US FROM RUSSIA ENJOY DAN:

VLADIMIR AND SVETLANA ZHARKOYE RUSSIAN  BEEF STEW by CHEF DAN:
Serves 4

INGREDIENTS:
1 pound beef roast or ground beef
5 potatoes
1 onion
2 tablespoon butter
2 carrots
2 parsnips
4 cups shredded cabbage
6 cloves garlic, minced
1 cup red or white wine
2 tablespoon sour cream
1 tablespoons dill, chopped
1 tablespoon parsley, chopped
1 (1O.3/4- Oz) can beef broth
Sea salt and freshly cracked pepper to taste

DIRECTIONS:   (PRE-HEAT OVEN TO 170-C OR 350 DEGREES)
1.   Peel potatoes, wash, cut into cubs and fry in butter until light golden.
2.   Slice onion, carrots, parsnips and cabbage, sauté until golden.
3.   Cube beef and fry until lightly browned.
4.   In a baking dish, place beef, potatoes, onion, carrots, parsnips, garlic, cabbage and salt and pepper.
5.   Pour in the broth and bake in pre-heated oven for 50 minutes.
6.   Pour in wine, sour cream, dill, parsley and bake 10 minutes longer.
7.   Serve Zharkoye with salad, pickles, or sauerkraut.
