de MAYO REFRIED BEANS FOR THE SOUP KITCHEN by CHEF DAN:

INGREDIENTS:
2
tablespoons olive oil
6
onions, coarsely chopped
8
garlic cloves, minced
1
gallon can black beans
1-1/2-cups
water, or 1 can of beer
2
tomatoes, diced
1/4-cup
cumin
2
tablespoons Chile powder
2
tablespoons dried oregano
Salt
to taste
DIRECTIONS:
1.
In
a skillet over medium-high heat add oil, when sizzling.
2.
Add
onion and sauté for 5 minutes.
3.
Add
garlic and sauté for 1 minute.
4.
Add
the beans, water tomatoes, cumin, Chile powder, and oregano.
5.
Stir
and simmer until nice and creamy.
6.
Don’t
add salt until dish is done and taste first.
