VEGETARIAN SAUERKRAUT SOUP ENJOY DAN:

VEGETARIAN SAUERKRAUT SOUP FOR THE SOUP KITCHEN by CHEF DAN: \
Serves 20

INGREDIENTS:
12 cups water
2 (16 Oz) jars sauerkraut
2 tablespoon olive oil
1 (26 Oz) can cream of mushrooms soup.
5 Yukon gold potatoes cut into small dice
4 carrots, chopped
2 onions, chopped
3 stalks of celery
1/4-cup vinegar
2 bay leaves. 1 tablespoon caraway seeds, toasted and ground
1 tablespoon smoked paprika
1 teaspoon pepper

DIRECTIONS;
1.   In a stock-pot heat oil over medium-high heat when simmering.
2.   Add onions, carrots, and celery, stir fry 5 minutes,
3.   Add water, sauerkraut, potatoes, mushrooms soup, vinegar,  caraway seeds, paprika, and pepper,
4.   Bring to a boil.
5.   Cover reduce heat and simmers for 1-1/2-hours.
