CILANTRO LIME
RICE by CHEF DAN:
Serves 2-3
INGREDIENTS:
1
cup rice, jasmine, arborio, basmati or long grain rice
Zest
of 1 lime
2
cups chicken stock or water
1
tablespoons lime juice
1
tablespoon olive oil, plus 1 teaspoon
2
cloves garlic
1/2-teaspoon
ground cumin
DIRECTIONS:
1.
Rinse
the rice until the water runs clear.
2.
Drain
and place in a sauce-pan and bring to a boil.
3.
Cover
reduce heat and simmers for 20 minutes.
4.
Turn
off and let steam for 10 minutes.
5.
In
a food processor add the cilantro, lime zest, lime juice, garlic, and cumin.
6.
Blend
until smooth adding oil as the blender is running.
7.
Fluff
the rice with a rice paddle and add 1 teaspoons olive oil then the cilantro
mixture.
8.
Fold
the rice until wee combined and rice is green.
9.
Season
with sea salt and freshly cracked black pepper.
