CARNE ASADA TACOS MADE MY WAY by CHEF DAN.
Serves

INGREDIENTS:
2 pounds skirt steak
12
corn tortillas
1
onion, diced
2
tomatoes, chopped
1
cup sour cream 1 head lettuce, chopped
2
cup sharp cheddar cheese
1/4-
cup cilantro plus 2 tablespoons
MARINADE:
3
cups orange juice
1
tablespoons lime juice
1
tablespoon ground cumin seed
2
garlic cloves, minced
2-tablespoons
cilantro, chopped
Sea
salt and freshly cracked black pepper to taste
DIRECTIONS:
1.
Pour
marinate in a zip lock bag.
2.
Add
meat and marinate overnight in the refrigerator.
3.
Cook
steak in a skillet on medium-high heat for 3 minutes on each side.
4.
When
steak is cooked, place on a cutting board for 2-3 minutes.
5.
Cut
steak against the grain into small strips.
6.
Serve
in warm tortillas with desired amounts of avocado, tomato, lettuce, sour cream
and cheese.
7.
Mix
onion with 1/4-cup cilantro and serve on top.
