HAWAIIAN AHI POKI by

INGREDIENTS:
1
pound fresh sashimi-grade tuna
3
tablespoon light soy sauce
3
scallions finely cut on the bias
1/2-red
onion, finely minced
1
tablespoon sesame oil
1
tablespoon, finely grated ginger
2
tablespoon EACH rice wine vinegar, mirin, lemon juice, tamarind
1
tablespoon toasted sesame seeds
Chili
garlic sauce to taste
Thinly
sliced (hayanie Kombu) dried kelp
1
tablespoon chopped cashews
DIRECTIONS:
1.
Blend
all ingredients EXCEPT the tuna in a bowl.
2.
Mix
well.
3.
Taste
and season, adding kosher salt as necessary.
4.
Use
as much of the sesame oil and chili sauce as you like.
5.
Cut
tuna into 1/2-inch squares.
6.
Gently
toss the tuna in the dressing and refrigerate for 30 minutes.
