VEGAN AFRICAN
PEANUT SOUP by CHEF DAN:
Serves
4
INGREDIENTS:
2-tablespoons
olive oil
1-red
onion, chopped
1-poblano
pepper, seeded ribs removed, finely chopped
1-red
bell pepper
1-carrot,
peeled and finely chopped
2-teaspoon
curry powder
1-sweet
potatoes, peeled and diced
1-yellow
squash, peeled and diced
2-garlic
cloves, minced
1-thumb-size
fresh ginger, shredded
1-(15
Oz) can diced tomatoes
4-cups
veggie stock
3-tablespoons
crunchy peanut butter
1-(14.5
Oz) can black beans, drained
1/4-
cup dry roasted peanuts
DIRECTIONS:
1.
In
a stock-pot heat over medium heat and when simmering.
2.
Add
onion, poblano pepper, red pepper, bell pepper, and carrot and sauté for 5
minutes.
3.
Add
garlic and ginger, and curry powder and sauté 2 minutes.
4.
Add
tomatoes and a pinch of salt and simmer for 5 minutes.
5.
Stir
in sweet potato, yellow squash, black beans, and stock and simmer for 15-20
minutes.
6.
Whisk
in peanut butter and simmer for 4-5 minutes.
7.
Taste
for seasoning and garnish with cilantro and peanuts.
