VEGAN SAUSAGE WITH GRAINS ENJOY DAN:


VEGAN GRAIN MEAT SAUSAGE WITH QUINOA AND BLACK BEANS

Serves 20

 

INGREDIENTS:

2 tablespoon olive oil

3 onion, chopped

6 carrots, chopped

5 celery stalks, leaves included, chopped

6 garlic cloves, minced

8 Italian vegetarian grain meat sausages

2 (15 Oz) cans diced tomatoes

2 cups quinoa

8 cups vegetables stock

1/4-cup Herbs De Provence

1/4-cup Italian seasoning

2 tablespoon smoked paprika

1 tablespoon cumin

2 (15 Oz) cans black beans

 

DIRECTIONS:

  1. Heat oil in a stock-pot over medium-high heat and when sizzling.
  2. Add onions, carrots, and celery and sauté for 5 minutes.
  3. Add the sausage and garlic and sauté for 5 more minutes.
  4. Add the remaining ingredients including quinoa, excluding the beans.
  5. Bring to a boil and then reduce heat and simmer for 20 minutes, stirring occasionally.
  6. Meanwhile mash 1 can of black beans with a fork.
  7. After the sausage mixture has cooked for 20 minutes.
  8. Add 1 can black beans and the mashed beans.
  9. Simmer for another 5 minutes.
