VEGAN
GRAIN MEAT SAUSAGE WITH QUINOA AND BLACK BEANS

Serves 20
INGREDIENTS:
2
tablespoon olive oil
3
onion, chopped
6
carrots, chopped
5
celery stalks, leaves included, chopped
6
garlic cloves, minced
8
Italian vegetarian grain meat sausages
2
(15 Oz) cans diced tomatoes
2
cups quinoa
8
cups vegetables stock
1/4-cup
Herbs De Provence
1/4-cup
Italian seasoning
2
tablespoon smoked paprika
1
tablespoon cumin
2
(15 Oz) cans black beans
DIRECTIONS:
- Heat oil in a stock-pot over medium-high heat and when sizzling.
- Add onions, carrots, and celery and sauté for 5 minutes.
- Add the sausage and garlic and sauté for 5 more minutes.
- Add the remaining ingredients including quinoa, excluding the beans.
- Bring to a boil and then reduce heat and simmer for 20 minutes, stirring occasionally.
- Meanwhile mash 1 can of black beans with a fork.
- After the sausage mixture has cooked for 20 minutes.
- Add 1 can black beans and the mashed beans.
- Simmer for another 5 minutes.ENJOY DAY: BON-APPETITE!!
