DELICIOUS BEEF TONGUE TACOS by CHEF DAN:
Serves

INGREDIENTS:
1
3-4 pound beef tongue
2
onions, diced
1
head of garlic cloves, peeled and crushed
5
bay leaves
1
tablespoon peppercorns
2
tablespoon salt
1
tablespoon vegetable oil
12
corn tortillas
1/2-cup
salsa Verde
Directions:
1.
In
a stock-pot with two-thirds full of water.
2.
Add
tongue, onions, crushed garlic cloves, bay leaves, peppercorns, and salt.
3.
Bring
to a boil, reduce heat and simmer for 3 hours.
4.
Remove
tongue and let cool then peel off the skin, trim the gristle.
5.
Slice
the tongue into 1/4-inch slices.
6.
Heat
oil in sauce pan over medium-heat and sauté the slices on both sides until they
are lightly browned.
7.
Remove
from pan and cube the slices.
8.
Soften
tortillas on the stove-top until pockets of air appear in them.
9.
Place
large spoonful of meat in the center of the tortilla.
10.
Add
spoonful of salsa Verde
11.
Top
with chopped tomatoes, chopped avocado, and cilantro.
12.
Garnish
with sliced radishes.
SALSA VERDE:
8-10 tomatillos, 1 tablespoon olive
oil, 1/2-cup chopped onion, 1/2-cup fresh chopped cilantro, 1 tablespoon lime
juice, 1/2- teaspoon sugar, 2 Serrano peppers, seeded, and chopped, 3 chopped garlic,
and salt.
DIRECTIONS: (PRE-HEAT OVEN TO 350 DEGREES)
1.
To
prepare fresh tomatillos, strip off the husks and rinse under warm water to
remove any sticky sap clinging,
2.
In
a bowl mix tougher oil and salt and stir in tomatillos and garlic.
3.
Place
on a baking sheet in a pre-heated oven bake for 15 minutes.
4.
Let
tomatillos and garlic cool and place all the ingredients in the blender and blend
until smooth.
