SHREDDED
BEETS WITH WHITE BALSAMIC VINEGAR by CHEF DAN:
Serves
4
INGREDIENTS:
2 Tablespoon olive oil
2 Tablespoon olive oil
2
fresh beets, peeled
2
tablespoon white vinegar
1/2-cup
dried cherries
1/4-cup
feta cheese
1/4-cup
dry roasted peanuts
Kosher
salt to taste
DIRECTIONS:
1.
Coarsely
shred the beets in a food processor with grater attachment.
2.
Place
in a b owl and set aside.
3.
In
skillet over medium-heat add vinegar and cherries.
4.
Season
with kosher salt to your taste.
5.
Cook,
covered for 2 minutes.
6.
Let
cool.
7.
Stir
in the vinegar and cherries into the bowl of beets.
8.
Top
with feta cheese and peanuts.
