MUSHROOM
SHRIMP STUFFED HALIBUT OR COD by CHEF DAN:
Serves

INGREDIENTS:
4
(2-inch thick) halibut or cod fillets
1
(8 Oz) package low fat cream cheese, softened
1/2-pound
cooked shrimp
6
baby portabella mushrooms, finely diced
1
shallot, diced
1
clove garlic, minced
Sea
salt and freshly ground black pepper
4
tablespoons butter, melted
2
tablespoons lemon juice
DIRECTIONS: (PRE-HEAT OVEN TO 325 DEGREES)
1.
In
a fry pan add 2 tablespoons butter over medium-heat.
2.
Add
mushrooms, shallots, garlic, and sauté for 4-5 minutes.
3.
In
a bowl mix together the mushrooms, mixture, cream cheese, and shrimp.
4.
Season
with salt and pepper
5.
Make
a pocket in of the fillets, making sure you do not cut through the sides of the
fish.
6.
Divide
the mushroom, cream cheese mixture into
4 equal parts,
7.
Stuff
each fillet.
8.
Place
on prepared baking sheet.
9.
Combine
remaining melted butter and lemon juice.
10.
Drizzle
over the fish and bake for 20 minutes.
