SHREDDED
BEETS WITH CREAMY DRESSING by CHEF DAN:
Serves
4-6
DRESSING:
1/2-cup
plain fat free yogurt
1/4-cup
lime juice
2
tablespoon cilantro leaves
1
tablespoon light agave nectar
1
tablespoon rice wine vinegar
2
cloves garlic, chopped
3
tablespoons grape-seed oil
Kosher
salt and black pepper to taste
INGREDIENTS:
1.
2
large fresh beets, peeled
2.
2
large tart apples, corded, peeled
3.
1/4-dressing
4.
2
tablespoons goat cheese
5.
2
tablespoons chopped chives
DIRECTIONS:
1.
Coarsely
shred beets and apples in a food processor fitted with grater attachment.
2.
Place
in a bowl and set aside.
3.
Combine
the dressing in a food processor and puree until smooth.
4.
While
the machine is running, slowly drizzle in the oil until incorporated.
5.
Season
with salt and pepper.
6.
Toss
the beets and apples with the dressing.
7.
Top
with goat cheese and chives
