ZUCCHINI FRITTERS WITH SOY DIPPING SAUCE by CHEF DAN:
Serves
4
DIPPING
SAUCE:
3
Tablespoons rice vinegar
1
tablespoon soy sauce
1/2-teaspoon
garlic powder
1/2-teaspoon
ginger powder
1-1/2-teaspoons
sugar
1/2-teaspoon
red pepper flakes
FRITTERS:
1-1/2-pounds
zucchini (3-4 medium) grated.
1/2-teaspoon
sea salt
1/4-teaspoon
ground pepper
3
eggs lightly beaten
1/4-cup
all-purpose flour
3
tablespoon fresh chives, thinly sliced
1
tablespoon cornstarch
1/2-cup
Parmesan cheese
2-4
tablespoon olive oil
DIRECTIONS
FOR DIPPING SAUCE:
1.
Mix
all ingredients together and whisk until sugar is dissolved.
2.
Set
aside.
FRITTERS:
1.
Using
the large holes of a grated box, grate zucchini into a bowl.
2.
Add
the salt, pepper, chopped chives, and eggs, mix well to combine.
3.
Slowly
add flour and cornstarch, stirring so no lumps form.
4.
Heat
oil in a skillet over medium-heat, until oil sizzles.
5.
Drop
1/4-cup of batter into skillet and flatten slightly with the back of a spatula.
6.
Cook
until golden 2-3 minutes.
7.
Turn
fritters over and cook another 2-3 minutes more.
8.
Transfer
to a platter.
9.
Add
more oil as needed and continue cooking with reaming batter.
10.
Serve
with dipping sauce.
