ZUCCHINI
FRITTERS WITH PARMESAN AND SALSA by CHEF DAN;
Serves

INGREDIENTS:
1/4-cup
buttermilk
1
egg, beaten
1/2-
cup Panko (Japanese bread crumbs)
1/4-
cup all-purpose flour
1/2-teaspoon
baking powder
3/4-cup
Parmesan cheese
2
teaspoon taco seasoning
2
tablespoon (EACH) dried parsley and dill
3
zucchini, cut into 1/4-inch slices
1/4-cup
sour cream
1/4-cup
pace salsa
INGREDIENTS: (PRE-HEAT OVEN TO 400 DEGREES)
1.
In
a bowl combine, buttermilk and egg.
2.
In another bowl, combine Panko, cheese, taco seasoning,
all-purpose flour, baking powder, parsley and dill.
3.
Dip
zucchini in the buttermilk mixture, then Panko mixture.
4.
Place
on a baking sheet coated with Pam.
5.
Bake
at pre-heated oven for 20-25 minutes, or until golden brown.
6.
In
a bowl combine the sour cream, and salsa.
7.
Serve
with the zucchini.
