AVOCADO
SALAD WITH MANGO AND FETA CHEESE by CHEF DAN:
Serves

INGREDIENTS:
10
cups romaine, arugula, baby spinach or watercress
1/2-
red onion, sliced
1
mango, peeled, seeded and sliced
2
avocados, seeded, peeled and sliced
8
cherry tomatoes, halved
1
cup fresh blueberries
1
jalapeƱo, seeded and thinly sliced
1/2-English
cucumber, sliced on the bias
1/2-(15
Oz) can heart of palm, cut into bite size pieces
2
tablespoons fresh orange juice
2
tablespoon champagne vinegar
1/4-cup
olive oil
1
cup crumbled feta cheese
Sea
salt and freshly ground black pepper to taste
DIRECTIONS:
1. In a bowl
combine the lettuce, red onion, mango, avocados, cherry tomatoes, blueberries, jalapeno,
cucumber, and hearts of palm.
2.
In a bowl combine orange juice, and
vinegar.
3.
Slowly whisk in the olive oil to form
emulsion.
4.
Season with salt and pepper.
5.
Drizzle some of the dressing over the
salad and toss.
