BEEF HEART IN THE CROCK-POT ENJOY DAN:

ZOMBIE APOCALYPSE BEEF HEART IN THE CROCK POT by CHEF DAN:
10 servings:

INGREDIENTS:
4-5 pound beef heart
1/4-cup all-purpose flour
3 tablespoon butter
2 onions, chopped
4 carrots, chopped
4 potatoes, chopped
8 (Oz) fresh mushrooms, sliced
2 cups beef broth
2 jalapenos, seeded and sliced
2 teaspoon thyme
1 teaspoon EACH cayenne, chili powder, smoked paprika, and cumin
1/2-cup red wine
Salt and pepper to taste

DIRECTIONS:
1.   Wash the heart and remove any fat and arteries.
2.   Slice the heart in half, and then slice into 1/2-inch pieces.
3.   Dredge heat in the flour and season with salt and pepper.
4.   Heat the butter in a skillet over medium-high heat.
5.   Add the heart slices and cook for 1 minute on each side.
6.   Stir in onions, carrots, potatoes, mushrooms, broth, jalapenos, thyme spices, and red wine.
7.    Place in crock-pot and cook for 8 hours on low.
