CLASSIC MACARONI SALAD BY THE SOUP KITCHEN SOUS ENJOY DAN:

LORI AND MARCIA CLASSIC MACARONI SALAD by CHEF DAN:
Serves 20 -30

INGREDIENTS:
8 cups uncooked elbow macaroni
2 cups mayonnaise
1/2-cup white vinegar
1-1/3-cup white sugar
1/4-cup yellow mustard
2 onions, chopped
4 stalks of celery, chopped
2 bell peppers, chopped
3 tablespoons snipped fresh chives
1 teaspoon house seasoning (recipe to follow)

DIRECTIONS:
1.   Bring a pot of salted water to a boil.
2.   Add the macaroni, and cook for 8 minutes.
3.   Rinse under cold water and drain, set aside.
4.   In a large bowl, mix together mayonnaise, vinegar, sugar, mustard, salt and pepper.
5.   Stir in the onion, celery, bell pepper, house Seasoning, and macaroni.
6.   Top with fresh chives.
7.   Refrigerate for at least 3-hours.

HOUSE SEASONING:
1.   1 cup salt
2.   1/4-cup garlic powder
3.   2- tablespoon ginger powder
4.   1/4-cup black pepper

DIRECTIONS:
1.   Mix ingredients together in an air tight container and store up to 6 months.
