THAI BARBECUE SAUCE (NAM JIME JEOW) by CHEF
DAN:
Makes
1/2-cup
INGREDIENTS:
2
tablespoon olive oil
2
tablespoon red curry paste
3
Thai chilies, minced
2
tablespoon fresh ginger, grated
3
garlic cloves, minced
1/4-
rice vinegar
1/4-cup
soy sauce
1
tablespoon fish sauce
1/2-
cup sweet chili sauce
1/4-cup
oyster sauce
3
tablespoon tamarind
1/4-
cup brown sugar
1
teaspoon salt
DIRECTIONS:
1.
Add
oil to a sauce pan over medium-heat.
2.
Add
red curry paste stirring until it begins to bubble.
3.
Add
chilies, ginger and garlic and sauté for 1-2 minutes.
4.
Add
all other ingredients and bring to a boil, stirring.
5.
Reduce
heat and simmer for 5-10 minutes.
6.
Taste-test
your barbeque sauce, adding more brown sugar if not sweet enough, or more
vinegar if too sweet or too salty for your taste.
7.
Add
more chili if desired.
8.
Use
the sauce as a marinate for your meats, fish, sea food or brush it on while
grilling.
9.
Great
with ribs, burgers, salmon, shrimp, and more.
