PEAR AND PECAN WALDORF SALAD by CHEF DAN:
Serves
4
INGREDIENTS:
2
apples cored and diced
2
pears cored and cubed
2
stalks of celery, diced
1/4-cup
sliced pecans
1/4-cup
raisins
1/2-cup
dried cranberries
1/3-cup
mayonnaise
3
tablespoons lemon juice
3
tablespoon yogurt
1
teaspoon Dijon mustard
2
cups Romaine lettuce
2
tablespoon fresh chives, chopped
Kosher
salt and ground pepper
DIRECTIONS:
1.
In
a bowl mix together, mayonnaise, yogurt, lemon juice, mustard, chives, salt and
pepper.
2.
Add
apples, pears, lettuce, celery, raisins, cranberries and pecans.
3.
Toss
to coat.
