ORZO SOUP FOR THE SOUP KITCHEN by

INGREDIENTS:
30
cups chicken broth
2
(40 Oz) cans of tomato soup
10
carrots, diced
8
stalks of celery, diced
1
(80 Oz) can mixed vegetables
1
bunch of Swiss chard
6
cups orzo
1
cup lemon juice
10
eggs whites
2
cups fresh cilantro
DIRECTIONS:
1.
Add
chicken broth all ingredients except cilantro.
2.
Bring
to a boil and then reduce heat and simmer for 1-2-hours.
3.
Stir
in Swiss chard and simmer for 12 minutes longer.
4.
Whisk
in egg whites, lemon juice and simmer for another 7 minutes.
5.
Stir
in cilantro.
