SON-IN-LAWS ANGLE HAIR PASTA WITH CLAMS

INGREDIENTS:
3
tablespoons olive oil
6
ounces Canadian bacon, chopped
1
pound angel hair pasta
4
cloves of garlic thinly sliced
1-1/2-cups
just-shucked littleneck clams about 2 dozen
1
(8 Oz) bottle clam juice
1/3-cup
white wine
1
(14.5 Oz) can diced tomatoes
1
teaspoon dried hot red pepper flakes, or 2-3 dried red peppers.
1/2-cup
finely chopped flat-leaf parsley
Fresh
ground black pepper
DIRECTIONS:
1.
Put
a pot of salted water on to boil.
2.
Cook
pasta according to package directions.
3.
Drain
and set aside.
4.
Heat
1 tablespoon olive oil in a skillet over medium-high heat until hot.
5.
Add
Canadian bacon and sauté for 3-4 minutes until crispy.
6.
Add
garlic and sauté 30 seconds.
7.
Stir
in clams, clam juice, wine, tomatoes and red pepper flakes.
8.
Cover
and bring to a boil and cook until clams open about 4-5 minutes.
9.
Add
cooked pasta to the clams and toss with parsley and reaming olive oil.
